Cannonau of Sardinia

 Nepente of Oliena Classico 2019

 Color: Intense ruby red, with light garnet reflections.
Nose: Complex and ample, with balsamic notes, quince jam and light tobacco.
Taste: Round and full, very persistent and soft, the good acidity and the glycerine charge balance the tannins well.
To be served with: Roasted red meats and aged cheeses.
Grapes: 100% Cannonau di Sardegna.
Vinification: Fermentation with indigenous yeasts. After a long maceration, the wine rests in steel until the following spring, then passes into barriques for a year, and finally another two years in 5000 liter oak vats.
Training system: Espalier with yields of about 50 q / ha.
